Sweet Veggie Juice

Last Updated: February 6, 2012

Welcome! It looks like you might be new here, so I wanted to take a moment to tell you a little about me and my blog. My name is Julie Ryan and I live with Fibromyalgia. I've chosen to live positively, to fight back with diet and lifestyle changes and it's made a huge difference for me. The difference between living all my days in bed, and actually LIVING. I hope you'll keep reading and subscribe to my Newsletter to make sure you don't miss a post. Thanks for visiting!

Welcome back! I'm so glad that you are here again. If you've not already, be sure to subscribe to my Newsletter and I'll update you each time I post (and occasionally I'll send you something special).

Today I’m starting my second Reboot. After returning from my trip I felt like I needed to reset again to get myself back on the veggie bandwagon. I got back into the meat eating mode while I was gone and it continued when I returned to the point where I was finding myself eating less and less produce.

So I’m back at the fun of creating some interesting juice recipes, and today I came up with something very unexpected (for me).

I had this butternut squash that I picked up a couple of weeks ago. I’d been putting off doing something with it because I wasn’t sure what to do with it. I’ve never been a fan of butternut squash (bad childhood memories) but I saw a recipe,  combining it with apples, for a juice. I couldn’t find that recipe today so I decided to just “wing” it.

Sweet Veggie Juice
1 small butternut squash (peeled)
1 apple
3 carrots
2 cups of Spring Mix salad
1/2 Lemon
(I opted not to use the cucumber that is in the picture above).
I juiced everything then topped it off with a tablespoon of cinnamon. It was quite yummy, like drinking desert.

    Hi Julie,

Thanks for the recipe. If you’re a cinnamon fan, I highly recommend carrot, Apple, half a frozen banana and some cinnamon (i usually chuck in some coconut oil and protein powder for hidden goodness).

It tastes just like carrot cake. Mmmmm.

Found giving up sugar in Feb (14) has done wonders for my pain management and flare ups. Good for my fatigue too. Smoothies are my new easy breakfast. 🙂

That does sound yummy. I’ve often made carrot/apple juice with cinnamon on top, but I like the idea of turning it into a smoothie – and I do love me some carrot cake!

That sounds really good. I like butternut squash because they are pretty and sweet. And carrots are always a good idea.
